Q: What is the diameter of the stainless probe?

My dig caliper says 5.95mm diameter for metal probe, slighly bigger for the rubber/heat shrink above it.

Q: What is the output voltage range?

There is no output voltage as these are thermometers and not probes. Respectively you can plug them into both 5.5v and 3v.

Q: What are the maximum and minimum operational temperatures for this product?

The interweb says Wide temperature range of -55 ℃ ~ +125 ℃ I am not sure I would test those extremes

Q: Has anyone tried using these with a PLC?

No it did not with the one I purchased.
