Other reviewers recommended buying these w/ a sub woofer. Would it make that much of a difference in sound quality to purchase them without the sub?

It will absolutely make a huge difference without a sub woofer. I have these in my Jeep Grand Cherokee rear doors and they have very little bass. Clear sound for the price and I would buy them again but very little low end.

Do these have the adjustable tweeter? As in I'm able to move it to aim it upwards

Tweeters do not move. I wish they did. Maybe try a component setup.

Will these fit in my 2000 ford escort? I've heard people say yes and no...

I bought these for my sons Ford escort, not sure of the year, maybe 2000? They were the correct size. If you go to the Fosgate website there is a link that will tell you what they fit. If I remeber correct the link is also on the Amazon site for the speakers.
