what is the best way to clean?

I just wipe it with water with a little Dawn detergent on the rag. Then clean with a damp rag. Mine hasn't stained and still looks good as new.

Is it possible to send the item by rolling up the mat? I am a bit concerned that it will not lay flat after receiving it.

It will lay flat once you do some of the suggestions they offer. One you can iron it or blow dry. It was easy for us to iron. And of course you give it a couple of days on its own it will lay flat with some time.
