I’m not finding an incandescent 3-way Edison bulb that is a 120v. What do you recommend?

Dear Customer, The table lamp doesn't include the bulb,and not all LED bulbs are compatible with our dimmer system.It may cause flicking,even losing the dimmable function.It will be better that work with our store's LED Filament bulbs,Asin:B083XGWVVQ. Thank you!

Does the wire retract?

The cord does not retract. Is that what you mean?

Does the touch control allow me to go directly from Low to off ?

Mine may be defective. First touch = fairly bright, second touch = very bright, third touch = barely see the filament glow in a dark room, and 4th touch is off. I would mainly use this on low, except there is no low.
