does this gun take average temperatures or just min and max

The display reads average temperature of the unseen scan area. The unseen scan area gets larger the further you pull the instrument away from target. The spot you do see is just the laser pointing target that depicts the centre of the unseen scan area. So the further away from target the larger area resulting in possibly averaging a greater amount of temperature differentials. Conversly the closer you are to target the more accurate the reading of the point depicted by just the laser spot. At range 300mm the scan area is 38mm diameter. At 900mm range the scan area is 100mm diameter. As per the answer immediately below the unit can produce Max Min or average temp of this unseen scan area.

Is this the model that can also use a K type probe?

No afraid not it's purely infra red. But a very good one. I bought a cheap uni-t multimeter with k type probe and that works very well.
