Does this caramelise?

I have found it acts just the same as sugar so I would think it would caramelise just the same.

Does anyone know if the “erythritnol”within this product would tigger a standard drugs & alcohol test?the work i do requires 0% 12 hours before.

Erythitrol is a sugar alcohol but it does not contain any alcohol in it,so you’re safe

Is this same as monk fruit sweetener?

I like this much more than monk fruit sweetener.To me it tastes more like normal sugar.

Could this be used on the top of creme brulee i.e. will it caramelise and harden under heat?

Well - I'm not sure because I haven't done a creme brulee. But I would think so. The sugar has a very nice brown sugar flavour and is crunchy like demerara sugar - possibly even more crunchy than demerara. It's definitely worth a try.
