Does the bag hold its shape when it’s not full?

For the most part, yes. The sides are soft, but they do hold shape. However, the sides do not stand upright on their own if the bag is not full.

Are there any other colors? I'm not a fan of a lot of pink? A black or tan color?

For three more dollars you can get it in black.

Can this be use as a personal item to travel with?

Most US Airlines allow you to have an under the seat bag that fits the dimensions of a backpack. I'd say if your bag is FULLY STUFFED, then it might not be allowed as a personal item. But if it's about 75-80% full then yes, I'd say it will fit under the airplane seat. Especially if you fly with Delta.
