How easy are these to cleanly remove?

Very easy because there’s not really on the back for the supplied double sided tape to stick to. I left a 2 star rating on these but it was filtered out because I gave a honest review. The back is hollowed out

Is this wolf head a scandinavian thing?

Not necessarily, their just wolf head images. But . . . they could be representative of "Odin's" two wolves from Norse mythology, Geri & Freki .

Will these stick to plastic parts on a Ryker

I don’t know about plastic but I would like to say yes. I bought these 3 years ago to put on my car. They are still there without any concerns of coming off. I would rate the quality as very high. Just make sure that the area you are sticking to is very clean before you put them on. Best of luck!
