Q: Can just one player play?

The Switch version introduces a two-player mode. The second player is able to help by rotating the screen and throwing turnips at enemies.

Q: Why is the switch version $10 more than the wii-u version was at launch? did they add a lot of new things that i'm not seeing?

The Wii-U version was the exact same prize at launch, 39.99.

Q: Can you save multiple games? Both myself and my kids want to play, but I don't see an option of each of us to have our own saved game.

Like others said, the easy way to do this is to create a separate Switch user account for each person that wants to play and select the right account when starting the game. This has the added benefit of being able to add parental controls per account, etc.
