I have an elongated toilet seat - will this fit?

Fits and secures are very different things. Does it fit an elongated toilet? It can sit on top of the elongated Kohler Highline classic that my folks have. Does it secure to an elongated toilet? It does not secure to the elongated Kohler Highline classic toilet. You can turn the dial until it can turn no more, and the lever is not reaching the front of the toilet bowl. The purpose of a product like this is to help someone with mobility issues safely use a toilet. There is nothing safe about this product if used on an elongated toilet.

Need to read the specs on this page, gives you info instead of having to ask. It adds 5 inches, but didn't work for me, never tight, very loose.

Will the Care x Easy Fit 5 inch high toilet snugly fit seats with 14 inch depth 11 inch width?

It is advertised as fitting most standard seats. I did not bother to measure anything and had no trouble with it.

Do I have to remove my current toilet seat or does this product sit on the existing sheet?

We sent it to a friend who had a knee replacement so I can't check it, but I think you can keep the existing toilet seat on and flip it up. The raised seat goes on the porcelain rim of the toilet bowl. It was perfect for our friend who has a small bathroom as it didn't extend too far from the sides of the toilet.
