I want to cut through the (bottom part) of chicken drumsticks and use pliers to pull the ligaments out. Would these be sturdy enough for the task?

Yes, I believe they would. We use them to remove pin bones on fish fillets, but they seem pretty sturdy.

What grade of stainless

It doesn't state the stainless steel grade on the package or on the pliers. I purchased the plasma color. earlier this year. I wash by hand, don't put in dishwasher. So far, still in excellent condition. I use it for fish bones, and extracting the membrane from chicken. It's an excellent chef's tool, a must in the kitchen.

Can you disassemble for cleaning?

no, but they are very easy to clean. I pop them into the dishwasher or quickly sponge them off. I have no problem cleaning these whatsoever. My kitchen shears, on the other hand, must disassemble to get really clean.
