Are the paper discs which drop in with the coffee compostable ?

If you're referring to the gasket ring which comes off the rim of the pod it is referred to as a "paper gasket" and I've been composting them. Some pods have a disc at the top of the pod where the the three piercings are, I compost this too if it looks like paper. In the case of genuine Nespresso (or Starbucks) ones I leave it as it appears to be some sort of cellulose stuck to the base. Guessing it would break down when they smelt the aluminium.

Does this work with Lavazza coffee pods?

Not sure. Only if they are the same shape as dualit and nespresso capsules as shown in the pictures. It turns them inside out to remove the coffee within so needs to be so to work effectively.

Anyone had problems removing the green lid? Ours was delivered with the lid already fixed and there is no way it will come off

It is tight to start, there is an arrow showing which way to turn it, or a line up mark, it’s anti-clockwise to open. Place the bottom of the capsule ( pointy end) facing up, then gently but firmly press down.

Can it be used in plastic capsule? I am concerned they are still using mining to get "Aluminium " so I am thinking to use plastic instead.

No, this is only for the aluminium shell type capsules, like the pukka Nespresso capsules. No good for plastic capsules.
