Top notch
Recommended by Emily Schumann Forward: from a friend once monthly free newsletter (I’m not upgraded to paid)-I’m not sure exactly how it works, but her husband researches products and makes recommendations and she mentioned that he loves these knives, which he gets professionally sharpened like once a year. I got the one that was recommended this one and it was originally intended for my husband. But this knife size works for both of us even though I am smaller. The knives we mainly use are MAC, recommended by Chef Eric Ripert. I have a small manual whetstone for sharpening and I sharpen them often. They work great and are so durable. But, I love the sharpness of this one - and it has become a go-to in our kitchen. Fantastic Japanese quality.

Unbelievably sharp with smooth hand grip
I already know about Masamoto is well known top knife maker with long history. And I have Japanese traditional style knife from Masamoto. Now I tried western style knife. It was more than I expected. The original manufacturer knife sharpen setting was so unbelievable.

Seriously sharp
I cook a lot at home and saw a recommendation of this knife in a cooking magazine. It is amazing. The sharp edge bites into most vegetables with just the weight of the blade. It has a convenient balance, and good handle. It does require sharpening about every 2 weeks with a sharpening stone, but that takes less than 5 minutes.

Nearly perfect for those who want an extra-large, low maintenance, high quality knife.
The overall profile of my Masamoto gyuto knives are better than my other Japanese gyuto. I have large hands. The heel is tall enough for my knuckles to never contact the cutting board, but the belly isn't too deep to cause unnecessary drag when cutting through large vegetables/animal protein. I like the 70/30 grind, the balance, the weight, pretty much everything. I'm glad I gave Masamoto knives a try. Now I know.

This is the best knife I have ever used, especially for cutting salmon

Very Disappointed.
I got this knife as a birthday gift to my fiancé because he's a chef....as I had hoped, he was VERY happy when it arrived, and also very satisfied with it initially. The knife handled well and was so sharp that it cut most things like butter. However, today, after just 3 months of use, he was using the knife to cut ginger (of all things) when a chunk of the knife just came right off! Fortunately neither of us were hurt, but the chunk that came off was extremely sharp and could have caused some damage. I don't know how a company that emphasizes its products' sharpness, durability and long-life can sell a knife like this, especially for this price.

Great balance and feel. Very sharp
Feels great in your hand when cutting. Well balanced. Lighter than many other high end knives.

This is my first Masamoto European style knife. The quality is true to its name. It’s expensive but you get what you pay for. The weight, sharpness and durability is top notch.
