I need to know which thermo paste is better the IC Diamond 7 carat thermo paste or the IC Diamond 24 carat thermo paste?

The 24 carat is for multi-core cpu and gpu components as there is more synthetic ic diamond to transfer heat to your HSF or water block. The 7 carat is for low-end components like low-end CPU\GPU's that aren't OC'd much. For example if you use a water cooler in your setup you're better off with the 24 carat than the 7 carat. If your CPU isn't being Overclocked and you're using the stock HSF then the 7 carat is fine.

Im currently building my custom pc for the first time liquid cooled. Is IC Diamond 24carat better than the 7carat version? is it better than artic 5?

No they're not the same, the 24 carat has more micronized diamonds per ml hence why it's thicker in consistency than the 7 carat. Yes it's better than AS 5 when you follow the application instructions. Don't use a spreading method, put a pea-sized daub in the middle and squish HSF onto it and do not lift up to check if the paste is spreading, it will spread just fine using the prescribed method IC diamond recommends.

Will this work on a i7 5820k and g1 gaming windforce gtx 980ti?

Sure, it will work just fine on the I7 and your 980 if you are replacing the cooler.

Has anyone applied IC Diamond to a larger server processor? The AMD Opteron 6386 SE is 2 inches x 1.5 inches. So it's not even really square.

I have not applied it to a server processor but something close. I used it on a I7-980X. It does a great job keeping anything cooler.I would highly recommend it.
