I actually made a vegan caramel sauce today and the extract just brought the whole thing together, I'm very pleased with it. At the moment, I'm in the process of writing a recipe Ebook and all the recipes need to be cooked and tested, so a lot of ingredients are needed: extracts are difficult to find at a reasonable cost.
