Is the thermometer supposed to be at zero each time before placing it into the chicken or meat?

No. It doesn't matter where it is. It would automatically return to whatever the ambient temperature was and then change to the the temperature of whatever you're cooking when inserted. For example; I'm holding the AMMZO thermometer in my hand right now and it tells me the room temperature is 74.3 degrees. When I pinch the tip between my fingers it instantly (maybe 2 seconds) changes to 93.6 degrees, my skin temperature.

I keep getting an Error when trying to calibrate it. I’ve taken the battery out and out it back in. Has anyone had this issue, if so what did you do?

The same has happened to me…..so I gave up trying. I just assume this thermometer is not very good quality.
