Will this fit a henckels meat cleaver?

No, this is not a great choice for meat cleavers, depending on their width and height

My drawer is 2 3/4” high. how high is the block itself? my chefs knife handle is 1 1/4” wide so i’d like to know how thick it is so i can add 1 1/4

At the highest/tallest point it is 1 3/4 inches tall. Of course the knives fit into the slots (except for the largest knives ment for the bottom row, actually stick above the height of the block itself. Our drawer is 3 inches in depth with our widest knife at 2 inches. Nestled in the bottom row it still only leaves 1/2 inch. You should also check to see if your drawer fits exactly into the cabinet or leaves some room. Any extra room could give you the space you need. Hope this helps

what kind of wood is it made of?

The article description says beechwood. It is a very nice hardwood item and I am very happy with mine. I like being able to have my knives off the counter top, but still properly stored in a good quality knife block.
