Q: Is it made with HFCS or any corn syrup products

No indication of any other ingredients listed; "Tamarind extract only" . Web search had no other things listed either. I like this product and will be ordering another soon. www.tamarindpaste.org has info and recipes.

Q: How long does it last in the refrigerator?

Does not need to be refrigerated unless desired. I keep mine in the cupboard and it was still good after 3 months. Probably last longer in the refrigerator.

I honestly do not know what the shelf life of Tamarind paste is as I generally go through it within 6 months. I live in Colorado and leave it on the shelf with the molasses which is about the same consistency, it seems to be fine. A quick Google search says that the stuff has pretty much an indefinite shelf life but I would imagine that is in a cool dry and dark place.Once you start using Tamicon Tamarind paste you will probably only need worry about getting another because it can be used in so many things. Enjoy
