would these keep my hands warm while shoveling snow?

While they are on the thicker side, I think as soon as they got wet your hands would be freezing. I wouldn’t recommend these for working in the snow.

Should these be waterproofed before using? Beeswax or mineral oil?

They do not need to be waterproofed. Yes, some moisture will get in, but not bad. Mineral oil may cause them to leave oil on everything you touch, but it depends on the use you have planned.
