The stalks on my lilies are about one-half inch thick. Is the opening for the top loop flexible, for me to slip it around the stock?

Hard to say. I just tried to use it on my bell pepper plant and the stalk on that is a good half inch and it would not go through. Unless you can move the support piece to a place on the stem that is more narrow, probably not.

Are these sturdy enough to hold up tall sunflowers?

Depends on the weight, wind, and water. Our spiral ginger is 6ft tall in the the summer. These won't hold them up in the wind or when the nearby sprinkler hits them. For other light weight plants, these are great.

Has anyone used these for tall single stem Asiatic Lilies?

I used em for big iris's. They work perfectly, I reuse them every year.

How wide is the gap to slip the stem through?

It is oblong so 2” x 3”. But it is not an enclosed circle it curls around like a spiral so you can slip the stem in without going over the top of the plant you are looking to support. I have them for my glads and they work great.
