Do these secure to the pan well enough to keep them on during the cooking process on the stove? Or could they fall off easily into the burner?

The grips do fit rather snugly and may not fall off. However, we have made it a habit to remove them when the pan is placed in the oven. Then they are cool when you remove the pan.

Do these silicone handle grips fit the 2.75 qt dutch oven?

I own many sizes, and they fit them all. It’s almost like a taco shape. For sure a must buy!

Do these pads fit Straub 4Q dutch oven?

They are open silicone pads and just slip over a Dutch ovens handles. They are a tad wider than our 6Q handles so they would cover yours too I bet. These are not good to leave on while cooking as being so close to the pot they get hot. We use them more to just place or move our pot.
