I can "see" that these look like the hinges I need to replace. What does it mean by "demountable"? What is the difference in double vs single?

These hinges are mounted using a slot or pocket cut into the edge of the door and stile (door frame). The black portion of the hinge you see in the picture goes into the slot and a screw is tightened to clamp the hinge to the door and frame. A single screw will demount the door from the hinge if loosened. Do not buy these if there is no mounting slot in the door and frame. The single version only has a slot on the door.

Does this come with screws?

no screws are needed for installation. Unless you are talking about the screws that connect the two parts of the "Clamping" mechanism.

I have small black circles that came with the 10 pk. What do you need them for?

They go on the door in the lower corner away from the hinge and act as a cusion against the door frame, leading to a softer sound when the door closes.

I am planning to replace existing hinges. This hinge is offered in both 3/8" and 1/2" models. Where is the measurement made on the cabinet itself?

Look at the second picture of the hinge, It is the distance from the inside edge of the cabinet opening to the back edge of the door. Basically creating either a 1/2" or 3/8" overlap of the door to the opening.
