What is the thickness of the mat? Do you get 1mat or 2 mats?

You get 2 mats. They are about 1/4" thick. One side is felt, slides on counter, other side rubber. I put one under toaster oven to protect counter and easily move machine. I keep other on top as a heat shield to protect cabinet bottom above machine. Recommended!

Do I understand that these are 15 and 18-in pads?

They say 15 x 18 but it’s more like 14 3/4 x 18 but yes. The underneath side it resembles felt and slides on my counter in and out when i use it. I don’t like my air fryer sitting under my cupboard when in use so I put forward, use it, and then when I’m finished I slide it back. It works well.

Can these mats be used under a portable gas griddle or portable gas grill to protect a table?

Sorry do not know. Have used mine as a hot pad for various hot pans, oven dishes, and under the crock pot.
