What are the spouts made of? are they bpa and phthalate free?

All I can tell is the spouts are made of plastic, and they're NOT air-tight.

Can you shake this bottle before pouring, or does it not seal in this way?

Neither the lid, nor the simple spout is designed to automatically be leak/spill proof. However, I guess you could simply put your fingertip to the spout to slightly seal it, and shake the bottle gently before pouring. I use this set to store 2 different types of oil, and usually never have to shake them before pouring.

Can the logo name on the cap be removed?

Yes. There is no logo on the cap. Must be a sticker or something you saw. The caps do not stay on very tight. I would never use them in a situation where they could easily spill, like in a lunch box or something. They are fine for on the table or fridge or where you cook, but don't pick them up by the cap.
