What's the diameter outside of roller?

The specs say 4"x .6". I measured the exterior approx. 4"x 5/8". The metal is thin approx. .1cm thick.

How long each form is? It is confusing because there are three dimentions in the description

I have the regular and the mini ones..... the mini ones are 4"L x .6W". Which means it is a little over 1/2 inch around and 4 inches long. You cut circles of dough 2-1/2 inches to wrap around them to form a cannoli. xo

Do these float or sink in the oil when frying the shells?

I don't use a deep fryer so they do sit on the bottom of the pan. I do it this way, seam side down 1st, to prevent them from splitting open. Half way through I remove the form with tongs to complete frying.

Can these forms be used at temperatures higher than for frying, such as in the oven with phyllo pastry?

In my opinion yes I would think so. I have had them in a deep fryer anyou would be fine.d with no problem so again I think
