Great question. The thickness of our freezer bags is 2.6mils +/- 0.3mils.

will this keep moisture out if the food is placed in the refrigerator, and is this a newer technology than the double zip freezer bag?

The zipper is a little better than the old double zip freezer bags. The only way you can keep moisture out is if you squeeze all (or most) of the air out the bag. I also add a paper towel sheet to collect some of the moisture.
