Only if you give up the ODD and get a 5.25 to 3.5" or 2.5" hot swap bay, they do make them

Yes, 2 brackets are included for mounting drives on the metal surface by the PCI slots and motherboard.

Can you install a 2x120mm AIO cooler in the front if you use all the 3.5" drive bays?

I have the P5 not the P101, but from the listed specs: "Ready for radiators up to 360 mm in the front and 140 mm in the rear" it would seem a 240mm radiator is specifically supported. I mounted the Corsair H100i 240mm cooler in the front of my P5 and it fits perfectly.
