Q: Has this product been pasteurized?

Extremely doubtful. This sauerkraut is awesome. Pasteurizing fermented vegetables defeats the purpose. We "want" the bacteria grow by his fermentation process. Gut microbiome is 50% responsible for the immune systems and a large part of digestion. Bacteria living in and on us number 100 trillion. Eating foods like this sauerkraut help to increase the beneficial bacteria by providing food for them from vegetable fiber and complex carbohydrates and crowd out the pathogenic bacteria as they starve (they love simple sugars, consistency is the key here) as well as directly adding to their number. Strengthening the immune system with diet and probiotics can decrease autoimmune disorders I'm living proof.A great place to start is with Dr Robynne Chutkan book The Microbiome Solution. Ron

Q: Why does it claim to be high in vitamin c on the label, but exclude the vitamin c content on the details? i call bs. pasteurization destroyed it.
