It probably could, just depends on how big you bonsi is.

Can you fit a standard greeting card through the slats at the top, or do you have to open the top of the cage to put one in?

You can fit the card through the slats easily. However, the base of the cage also has slats so you can either rest the card horizontally or cover the base with something concrete so that the card does not fall through the slats at the bottom of the cage.

Do these bird cages have slide out tray for cleaning?

The photos are deceptive. There is no tray in either bird cage. I have a sense that these cages are actually for other uses besides actually keeping birds! There is so little room for a bird even in the larger one; I'd go for a regular bird cage, myself.

would a canary be able to get out through the bars.. are they close together? or would the bird get out

I personally wouldn't put a bird in there, I bought mine for decoration only and have two silk birds in it...I think it would be very difficult to keep clean.
