I feel good about this cheese.

A very nice cheese that is not so strong that it will overpower other flavors.This is the first time I have ordered a wheel of cheese and I am happy that it was a good experience.I happen to like goat cheese but I also know that while living in the United States that I only get to experience a few different varieties.So I was happy to see this Manchego cheese. I've only had a small wedge of extra aged Manchego cheese before and it was too rich for my tastes. But when I saw a wheel of young Manchego cheese I had to purchase it.It's still cheese, but this has so many possibilities that I probably won't find all the uses before all seven pounds are gone. It also pairs well with Molinary and Sons hard salami.Using cling wrap works well for this cheese, but be sure to let the cheese dry before cutting into it or wrapping.

I love this cheese. However, in future, I'll only order it during winter as the round was quite sweaty on arrival. Too long in transit.

i love Manchego cheese but this is just ok , and what arrived is not what is in the picture , what was in the picture is a much better quality of cheese but for the price it is ok

Seeing the various reviews high to low was a concern, but I had a five star experience. The description on Amazon should be changed to state that this is a three month old cheese, so you know what you are getting. I confirmed the age and quality with FoodFind, and the gentleman was extremely helpful, and has sold a lot of Manchego. The cheese is semi-soft, as you would expect of a young Manchego, but not so soft that a carrot peeler cant slice the cheese. It has a wonderful flavor, and our favorite way of eating it is with Rice Crackers, as the cheese and the toasty rice cracker are simply a great combination. I see that there are several sellers, so a better description is definitely in order, but at this price, you can only expect a three month old cheese, nothing younger comes into the United States. I have had the aged one year, and our family prefers the flavor of the three month old cheese, that's all we buy.
