This is stainless steel blade correct? The chart on the companion blade says that heavy duty knife is carbon...?

They come in both. Carbon is stronger but stainless is more corrosion resistant. Both can rust if not cleaned and dried. People make the mistake that stainless means the knife won't rust, but it will if not cared for properly.

How does this knife compare with the regular companion knife?

It's thicker and the sharpen angle of the blade is less, which means it holds the edge longer but won't be as sharp as the regular companion. I have both and the regular feels a little sharper but not a huge difference. The heavy does feel beefier. So it's a matter of what you prefer, both are nice.

What is the difference between carbon and stainless?

carbon will rust/ stain easier both come with a good edge on them and for the money as good as higher priced knives if not better.
