How is this fitted? I have a minix pc with m2 ssd support (it says on the box), but where does it plug in?

If your motherboard support it, there should be a short slot on the board that is the height of the WD M.2 card. There should also be a small screw on the motherboard that is the distance of the cards length for the slot. You need to undo the screw and then plug the card into the slot, finally put the screw back to stop the card from potentially falling out.

Will this work with a Macbook Air 2017 and if so what adaptor does it need?

Only if your MacBook has an M.2 slot - this is different from the standard SATA slot for 2.5" SSD. Check your manual to see if it has a M.2 slot. I don't know Apple MacBooks but I suspect it doesn't.
