can you use to pressure fry?, as in pressure fry the chicken piece

This only uses water and there is no Frying involved. You can pressure cook any food and if you want it crispier you can take it out and put it under a grill or gently fry in a pan after.

Mine arrived without the inner pot. Has this happened to any one else, if so how did you remedy this?

Mine came with the inner pot. You should contact amazon by phone 0800 4961081 who I am sure will rectify. Are you sure that you are missing this? It is only like an inner casing with no lid.

Can you cook potatoes in it

You can cook most anything in it. What you do need to remember is that whatever you cook is under pressure, so you need at least 1.5 cups of water. Pressure cookers are very fast at cooking, so do not need a long time and cooking will force liquid into whatever you cook due to the pressure. Potatoes will be softer than normal but also tastier.
