Can this be used to achieve tracking shots on smooth surfaces? e.g. smooth floor in buildings. what is your main use of this?

To be honest it is a bit of a nightmare to get smooth tracking shots on any surface. You would definitely need a track to guide it, or lots of practice.

If I was to use this outdoors with my photography umbrella diffuser and flash will this fall over if I attach it to the dolly?

The tripod dolly is only about 15 cms off the ground and, when fully extended has a radius of about 60 cms or more so unless your umberella diffuser is very heavy and well over a metre wide and you're intending to put it on a 3 m tripod I really don't think it will be unstable. The purpose of the dolly is adapt your tripod to be mobile so really the question would be "how stable is your tripod?" because it locks into the dolly which actually makes it more stable.

It doesn't really matter, it's a piece of garbage you'll try to use once and then give up on because the tracking shots are abut at smooth as Trumps chat up lines.

Can you replace the wheels with different sizes? (ie are they a standard thread size?)

Standard size. Can't change to any bigger size.
