Are these suitable for using in panini press?

I think the mats can cope with the heat. I would try it while keeping a watchful eye. My impression would be that food may not be as Krispy. Worth a try though. These sheets certainly take a lot of oven heat. Good luck.

No it's too thick, you put the food on top of it on top of baking tray

Can you use these in a dehydrator?

I would say that a dehydrator should not require non stick reusable baking mats. I would also say that these sheets are a great asset in the kitchen.
