Bertozzi Parmigiano Reggiano Cheese 18 Month Aged, 72-Ounce Units

From the other reviews, sounds like the cheese is really really good. Unfortunately, I didn't get a chance to find out. When I accepted the package from the FedEx driver, I immediately ran to the kitchen with excitement. That quickly turned to dismay when I opened the box, unsealed the thermal pouch, and discovered a *very* warm brick of cheese.The principles of foil insulation are to ward off conduction, convection and radiation. Used properly, they work quite well. But Amazon killed the entire thermal benefits of the pouch by wrapping both the cheese and the cold packs in heavy bubble wrap before placing into the thermal pouch. Additionally, due to the lack of moisture in the bubble trap they created, I don't think the ice packs were properly frozen to begin with.Hugely disappointing. Amazon, please teach your shipping personnel the proper use of insulated foil pouches. If this practice isn't corrected, I don't think this cheese can ever be successfully (i.e. safely) shipped.

I previously purchased a similar product from William Sonoma. I was happy to see a similar product for sale from Amazon at half the price. It's a good product with a good flavor and texture but not quite up to the standards of William Sonoma but at half the price I can make allowances. It was shipped quickly and in good condition and free because of the free shipping offer which was much better than the $10 shipping charged by that previously mentioned company. All in all I'll be purchasing from Amazon again.

It seems hard to find a great quality Parmigiano and even harder now that the European Union likes to impose all kinds of rules and regulations upon Italy as to how much and what it can export. This is a good cheese for the price, but I find it a little dry. I will order again, unless I find a better cheese.

I have enjoyed many PR's up to 30-40 dollars a pound and have a very good sense of quality. This is about an 18 month as stated. It is on the mild side which is quite special in itself. It has a fresh wonderful buttery taste of a fresh PR. There is individual merit for the various ages up to 36 months. I personally do not like the 36 months variety.This is a bargain and to be well appreciated.Pay the next day during the hot months.Mt second order 2 weeks later was not fresh, dried out not the young freshness and tenderness of a 18 month - did not taste good. Why!?We really like these cheese. The third shipment was perfect.

I have loved this cheese for many years. I now live in a location where it is not readily available. I was a bit reluctant about ordering online, worried about he quality, worried about shipping times. I just received the cheese, my worries were without foundation. I paid $3.99 extra to get one day delivery, well worth it, considering the value of the cheese. The cheese was well-packed and in good condition. The taste is sublime - rich, nutty, creamy and yummy. This is a young Reggiano Parmesan, it is a pale creamy color and milder than the well-aged version. I happen to prefer this milder version as I eat it as a snack. However, if you wish to have a strong, dark gold, well-aged version, this is not your cheese.I am well-satisfied with this purchase, the cheese is great and the price is reasonable.

I expected more. I am picky bout cheeses, and this one is not quite up to par. It could be a lower quality batch. The shipping was fine. I do not hate it, but like higher quality parmigiano cheese. I think that if you want medium quality cheese. I think it is a good value. I can't get anything this good at that price locally. I can get better cheese, but it will cost twice as much.I may buy more to use in certain recipes where super high quality cheese does not really matter.I really want to give it 3.5 stars.

Excellent product and a good value, too. Once you have the real deal from Italy, you will NEVER go back to the green shaker tube. Don't be dismayed if you find that the yellowed crust is too hard to grate. Save it and use it in sauces or soups.<<<<<<UPDATE>>>>>> July 12, 2011. Just received another order, and the quality and packaging is great. This time, I cut the crust into 1/4" cubes, and put in my food processor. It grated easily, and can now be used on spaghetti and other recipes.

This product came to me late August. Because the vendor is relatively close by, it was delivered a day early. When I opened the box, I discovered a thermal pak and two very small ice packs.The ice packs were only a bit cool, and definitely not frozen. Had I received the package the day it was scheduled to arrive, the entire order would have been ruined. Word to the wise -- only order in the winter months!
