I would say 10". I would also say, you might want to have pots and pans just for the rocket stove because they get soot on the bottom.

Is this stove insulated with ceramic or clay?

As far as I can tell it looks like clay. The outside of the stove doesn't get hot. The inner chamber is well insulated and burns very hot.
