I tried to crisp up some left over meat in this with some oil and it imediately stuck to it... can this not be used like a frying pan?

Yes it can be used as a frying pan and the same rule applies, when the pan is hot enough place the meat in and leave it until it forms a "crust" it shouldn't stick doing it this way

Will it withstand the temperature of a wood fired oven?

It should do. The cast iron can withstand a 220 degree in electric oven. Try on lower temp if you can then build up.
