I would estimate somewhere around 320-400. I was disappointed when I pulled it out of the packaging and it felt very coarse, like 60-100 grit, but then I noticed it seemed to have a lot of loose grit on the surface. So a few passes on a bench stone knocked off the loose grit and smoothed out the surface, leaving it feeling about the same grit as my other stones in the 320-400 range, about one step below a soft Arkansas.

As long as you keep aware of your sharpening angle,, sure!

Do you need to use water or oil with this stone

Can use water instead. Oil is best, water is second best, no liquid can be done but might do some damage to the blade (especially on fine cutting angles, like flat grinds on filet knives or kitchen knives)
