will this work for a 5.5 qt kitchen aid mixer? Meaning set the speed control and the use the on/off pedal

The device is a simple on/off toggle for whatever is plugged into it. The controlled device is plugged into this device's a/c outlet plug; pressing the pedal completes the power-loop while releasing the pedal interrupts the loop. What that does to your mixer would depend upon your mixer; if plugging it up while turned on and unplugging it does not harm it then it should be okay. If the speed-control is electronic then the speed-control would have to be reset every time.

Is this a waterproof foot switch? Also does it work with a 3 hp meat grinder?

I don't believe it's waterproof. It has a 3 prong plug so I don't see why it won't work on any 110 volt grinders.

Can you use this for other brands of grinders i have a cabelas carnivore grinder will this work for that

Yes it will, it works great with our Cabela's grinder. It has made filling our hamburger and sausage bags so much easier !
