How breathable is this Gi and does the dye from the black one irritate the skin?

It is very breathable because it doesn't accumulate the sweat. I don't feel like I'm slowly cooking inside it like i did suits that are half-polyester. I do not own a black suit so i wouldn't br able to tell.

I'm just under 5'8" and 200-205lbs. would the size 5 be ok for me?

You are caught in the middle of sizes. A 5 will fit your height but perhaps not your girth, but a 6 will be very long. I would go with the size 5. It's an excellent gi.

I would suggest that you select a size based on your height. You would then need to make some alterations depending on the fit. If you purchase the gi, it would include the white belt. Another option would be to by the jacket and pants separately. In this case, you might end up getting a size that might not need to be altered. In this case you would have to purchase the belt separately.

One reviewer has mentioned that it is mixed fabrics (polyester and cotton). Can you please verify that this Gi is 100% cotton, please?

This one will have 100% cotton . The person that gave the review that said they received a poly cotton mix was offered to have that taken back and resent the correct model.
