I have this product and it dies after six seconds after inserting its battery. remove and reinsert, you get another six seconds! any ideas why?

Mine has worked great for many years. I would suggest trying a brand new battery. If that doesn't work, contact the company and see if they will replace it.

What kind of sensor is used? Is it a thermocouple?

It's a thermistor, according to the CDN technical literature. Which explains why there is a minimum immersion depth. It's not a thermocouple, so more than just the probe tip is involved in the measurement.

Can the metal clip on the probe be detached?

Mine does not have a metal clip.
