Do you sell saya for this?

Hi John, Yes we do sell a saya cover that would fit the Tojiro Sujihiki Slicer 270mm that you have depicted.

What's 10.5 inches? The entire knife? Handle included? Or just the blade alone?

The blade is 10.5 inches, not including the handle.

Does this blade have any flexibility in it for fish fabrication like filleting or is it purely for sashimi and other asain cuts after fabrication?

It is not a filet knife. It has more flexibility than a chef or Santouko bu certainly far less than a filet knife.

Is this carbon steel? Does it require a ceramic rod or are regular rods preferred?

This knife is Stainless not Carbon Steel. Most Japanese knives like this are too hard and therefore more brittle for European honing rods. It is better to use a ceramic rod or a leather strop to maintain the edge between sharpenings with a whetstone.
