Super paring knife.

great knife even if it rusts, just wash and dry and no problem.
Great product, blade stays sharp, I have one that is over 70 years old and still going strong that was my mothers. Yes, it is showing some wear but is the favorite knife in the drawer.

Sorry product from Old Hickory.
Sorry products that smear the Old Hickory name. I have used Old Hickory kitchen knives for over 50 years but these last ones have ended my purchasing from them. The knives were crudely made with very little edge on the blade. The wooden handles were also crude with huge splinters visible and no polishing at all. After considerable effort I was able to grind a rudimentary edge on the blade and sharpen them I also had to smooth the handles. The knives met no stars of finished and certainly ended my purchase of Old Hickory products. These should have been confined to the "unusable" pile as they were defect riddled.

Hard review on this one but....
First thing I noticed was the blade was a bit proud of the handle on both sides. The blade sticks out of the handle approx 1/64 of an inch. Not enough to bother but...lets keep going. Second thing....the blade tip is a bit curved. A bent tip is one thing but this one is GROUND across the curve so it was a bent blade when manufactured. Third thing....flip the knife over and I see "2ND" stamped onto the blade. Fourth, the handle is rough and missing one tiny knick out of the wood. Final? I would have bought this used. The tip is an easy fix and the edge would be ground anyway. The handle is already planned to hit the trashcan. But hiding all of that in the sales listing? That's not a good seller. Won't ever use these fine folks again and won't ever recommend them. Buy at your own risk!

Best knife I ever used.
Years ago I was given a full set of these knives as a gift. But over the years they got lost from moving. And friends borrowing them and not returning them. Iโm rebuilding my set. I love them. They are quality made. And they stay sharp for a long time. Treat them right and they will last forever.

Feels great in the hand
Sharpens easy, holds an edge. A great knife for potatoes .... It rusts pretty easy, but I love it

Very nice paring knife
Well balanced and easy to hold. The handle has a square configuration which saddles firmly in the palm, without much effort. The blade is quick to sharpen and has a crisp tone when pulled on the honing steel. Paring vegetables is easy and precise. Pay attention to moisture and storage.

Seems good. Definitely not stainless so it should be okay to sharpen when needed.

Beware ! Itโs had 2nd etched on backside of blade, and itโs very much a 2nd in quality, even the wood .

Still possible to buy a carbon steel knife.
In my opinion a carbon steel knife sharpens easier and better. I am happy to have been able to replace the small steel paring knife I lost with this one.
