Is there a shelf life on these if they aren't needed for years?

properly stored in a non freezing temperate environment, they should store indefinately in original packaging and unopened/unused

how can I calculate how many gallons were used in order to switch to another one?

Calculate?? I’d say when it’s time to switch when it gets harder to suck or push water through the straw!!! However don’t forget you can back-flush them if you have the syringe from Another water filter.

does this make saltwater drinkable?

No, you need a reverse osmosis desalination system.
