I would think you could, especially at the start. I am growing a mango from seed.

Hello this is what it says on Google hope it helps. Coconut Coir (or Eco Earth) While using coconut fiber as a general substrate has its downsides, there is no issue when you use coco as a moist hide substrate. Coco holds moisture well and will not get moldy easily. Leos will gladly dig and even lay eggs in this substrate. I use it for Giant African land snails.

Is this ok for indoor rabbits to dig in

Once rehydrated it will be fine for rabbits to duig in. Just use the minimum amount of water needed.

How much water for one brick?

Approximately 2.5 to 3 litres of water per brick . You will need a large waterproof container or bucket . If you don’t add enough water it will be a little dry - you can always add more . If you add too much it’s not a problem , leave the coir outside for a while and it will evaporate.
