How much to fill 5 gal bucket?

A standard five-gallon bucket actually has a total capacity of a bit more than five US gallons - approximately 5.75 gallons, if I'm remembering correctly. If you fully hydrate/expand two of the blocks, you will have just a small amount left over after filling your bucket to the brim. Expect to get approximately three US gallons per expanded block.

Remember that composed coco coir - rinsed or not - will still contain a lot of sodium and potassium ions in it. After hydrating, it's a good idea to *fully* rinse it; the best way to do that is to SLOWLY dribble water through it for 24 hours. Regardless of whether you rinse it properly or merely put some into an old pillowcase and run water through it at a high rate with the garden hose for 20 minutes... After rinsing, allow it to drain (you can squeeze the pillowcase or whatever it's now in to remove additional water, but leave it good and damp), you'll want to replace those ions with calcium and a bit of magnesium. You can soak it for an hour in a weak solution of calcium nitrate with some Epsom salt added (both are inexpensive and easy to find), or you can buy a commercial "calcium + magnesium" product if you feel you have too much money. Afterwards, your product will be ready to use and will not "steal" Ca/Mg ions from your nutrient solution - as long as you do not allow your coco to dry out from the time you begin using it until harvest. REMEMBER: You can grow a substantial plant in a small volume of coco, and it is better to use a smaller container and water several times per day with nutrient solution than to use a larger container and only do so once per day; this is passive hydroponics, after all, meaning the only replenishment of dissolved oxygen in the root zone is by you replacing the nutrient solution with a fresh batch.

one brick will take over one gallon of water to expand and one brick will make about3 gallons of fiber.  I usually mix it with a good potting soil.

Is there any fertilizer in it?

It is nutrient sterile. I made that mistake in the spring when seeding the summer vegetable garden. You need to add fertilizer such as rendered fish waste.
