What is the range of output? how low will it accurately go? i need accuracy to at least 200g, preferably lower.

The accuracy depends mostly on the ADC resolution, 24Bit in the case of standard HX711, accuracy will be better than 200g even with 50KG load cell, it will be in the order of few grams at most. Thanks

Are the load cells essentially a voltage divider that ranges from 0-5 volts based on load?

If you use the whole set: load cell and HX711 together, it is.

Do these still work in damp locations? Like a bathroom where water might accidentally get on a scale?

It's not waterproof, so using in bathroom is NOT recommended.
