Sequatchie Cove Farm is located 35 miles outside of Chattanooga, Tennessee. The farm is a special place, surrounded by pristine Tennessee wilderness. Dancing Fern is their take on French Reblochon, and it is possible that the Tennessee version surpasses the quality of the original. About eight inches in diameter with a pink-orange rind, Dancing Fern is only available seasonally, from late spring until the end of summer or while supplies last.Like true Reblochon, Dancing Fern is made from raw (unpasteurized) milk and aged about 60 days. Even with the two-month aging period, it displays none of the sharpness or firmness one might associate with an aged cheese. Also like Reblochon, the cheese oozes out from beneath its rind as soon as you cut into it, even before it reaches room temperature. Utterly complex, we note hints of fresh cut grass, mushroom, broccoli, and asparagus on the palate. Used In A Recipe For Tartiflette
I used this in a dish I brought for Thanksgiving dinner. The name of the dish is Tartiflette. The recipe called for a cheese from France but suggested using another cheese made in the United States (not the Dancing Fern.) I wanted the dish to be authentic but I didn't want to pay what it would cost to import the French cheese so I researched the subject on other websites and what do you know, I found the matching cheese on Amazon! I received many compliments on the dish which is basically scalloped potatoes with cheese from France.
