Will the large long fit a kitchen aid standing mixer?

The small long fits perfectly. No leftover board hanging out on the sides, and about an inch-and-a-half sticking out in the front for grabbing to slide it.

How tall is the product when in use? I only have about 1 inch of free space

It is less than an inch thick. You should be fine

Where are "all the sizes?" Missing 14”x9.5”, best for larger coffee or espresso makers; 14.5”x7.5”, best for coffee grinders and smaller coffee maker

13" x 16" - good for larger toaster ovens, Insta-Pot, larger air fryer ~ 16" x 12" - good for small toaster oven, smaller air fryers ~ 13" x 10.5" - 3 quart Insta-Pots, toasters ~ 14" x 9.5" - large expresso or coffee pots ~ 14.5" x 7.5" -

is it water absorbent?

It is made of bamboo and it looks like it has a slight finish on it. After letting a drop of water, sit on it for many hours the water drop disappeared, and there was no residual watermark afterward. I am very impressed with this company. It is well-made.
