Will the large long fit a kitchen aid standing mixer?

The small long fits perfectly. No leftover board hanging out on the sides, and about an inch-and-a-half sticking out in the front for grabbing to slide it.

How tall is the product when in use? I only have about 1 inch of free space

is it water absorbent?

It is made of bamboo and it looks like it has a slight finish on it. After letting a drop of water, sit on it for many hours the water drop disappeared, and there was no residual watermark afterward. I am very impressed with this company. It is well-made.
